- 1 lb white fish (we suggest cod)
- 1 tbsp butter
- 1 onion, chopped
- ⅓ – ½ c. natural peanut butter
- 8 c. chopped spinach
- Salt & pepper
- Rice for serving
- Saute onion with butter in a pan until soft.
- Next, add fish and cook until it starts to flake. Mix in ⅓ c peanut butter, flaking fish while stirring.
- Add spinach and stir until it combines and cooks down. Add salt, pepper & additional peanut butter to taste.
- Serve over rice.
Chef tip: Be sure to use natural peanut butter, as it combines better with the other ingredients.
- 2 lbs stew beef
- 1 tbsp butter
- 1 onion, chopped
- ⅓ c natural peanut butter
- Any combination of veggies, for your personal taste (carrots, cabbage, tomatoes, onions, garlic, okra and/or spinach)
- Salt & pepper
- Saute onion in butter until soft. Add beef to onions and stir until beef is tender.
- Add peanut butter, salt & pepper to taste.
- Add veggies and cook until tender.
- Note: this recipe can also be made in the slow cooker or Instant Pot! To prepare in the slow cooker or Instant Pot, just add all ingredients except the peanut butter & cook. Add peanut butter in at the end, stir until combined. Enjoy!
